Key means only shots on target and the action that builds to it. Extended means you'll see all action other than time-wasting and short passes around the middle of the pitch. Comprehensive means all plays other than time-wasting. Full Match means you'll view every second of the game, meaning all 90 minutes. The next drop-down box can explain when you view highlights. For definition, "highlights" here are parts of the action you're actually shown, and non-highlights are shown in commentary only. The top sliders alter time compression during or between highlights to make matches faster or slower, with dead-center being real-time. Most of the options are self-explanatory, but you'll want to play around with them to get the feel of them. This opens all the camera options in a small pop-up box.
Simply use the DVR-style controls in the top-right corner, and hit the button that displays the international symbol for "pause." (Alternatively, you can just hit the space bar.) Then, click the button with the gear on it in the top-right corner. If you've never run a match since installation, the first thing you should do is immediately pause the game when it starts.
